I will second the recommendation for Alamo Inn and Keith. I am originally from the Valley, and I can assure that Keith knows his stuff. You can also do well just with the south Texas portion of the Texas birding trail guide brochures, which you can pick up at any of the "world birding centers" (there several such centers throughout the Valley).
